Our loin (or ”coppa”) is an unique product, refined and of very high quality. According to the recipe, that has remained the same from the times of our great-grandparents, you have to use the boneless capocollo, which is sprinkled with salt in order to achieve the right level of flavour. After it is seasoned with ground pepper and bagged in only natural skins and tied by hand. After that our loins are put to age for minimum 8 months in our cellars at a natural temperature. Through this procedure the product gets an unique aroma.
The used cut of the meat, that is particularly rich of fat veins, allows the loin remain soft and delicate despite the long aging time.
Can be enjoyed as a starter, maybe accompanied by a good pecorino-wine, or as a tasty main course.
Product of about 2,5 kg, the weight could vary being a handmade product
