The small loin, which is made of the best selected loins of our pigs, is one of the best known and appreciated product of our history. It is aged in our cellars using only salt and pepper, and it is normally ready after 6 months of aging. As it is composed of completely low-fat meat, it becomes dry in a short time. It is characterized by delicate flavour that is suitable for every kind of palate.
Perfect as a starter or as a delicate main course.
