The small loin is a low-fat sausage. In the past it was the first sausage to be tasted in spring. It is made of boneless pork loin, that is salted and seasoned properly and then transferred in cellar, where it stays for at least 6 months before it can be commercialized. The scent is unique and it is delicate but strong without being salty. The particularity of the small loin is the mix of flavours that are combined with the typical compactness of low-fat meat.
