Product Description
The unmistakable taste of our Lonza is given by its production process: it starts with the cut of the seventh rib, is then skilfully hand-cut and carefully tied. After initial drying, the loin is transferred to the cellar to complete its maturation at a natural temperature. Thanks to this process, the product acquires a unique aroma.
The cut of meat used, which is particularly rich in fat veins, ensures that the loin remains soft and delicately flavoured despite the long curing time.
It can be enjoyed as an appetiser, e.g. accompanied by a good pecorino cheese, or alternatively as a tasty main course.
The weight of about 2.5 kg may vary as it is a handmade product.
